Homemade Granola

Granola is a sneaky food. It sounds healthy – after all, it’s made with oats and nuts, and healthy ingredients, right? Problem is, much of commercial granola is laden with oil and sugar. Of course, you can buy the organic or “all-natural” brands, but then you’d be paying over $10 per pound! Why not make your own? It’s quick and easy, and you can add your favorite ingredients.

Vanilla almond granola


Here’s my easy recipe for vanilla almond granola:


  • 1 ¼ cup large-flake rolled oats (not instant or quick oats)
  • 1/3 cup slivered almonds, chopped
  • 1/6 cup maple syrup
  • 1 Tbsp safflower oil
  • 1 Tbsp hemp seeds
  • 1 Tbsp flax seed (ground)
  • 1 ¼ tsp vanilla
  • ½ tsp cinnamon


  1. Mix all ingredients together.IMAG1541
  2. Spread on an ungreased baking sheet.
  3. Bake at 350°F for 15-20 minutes. Allow to cool.
  4. Optional: Add raisins, dried cranberries, mini chocolate chips, or additional slivered almonds


Per 28g serving (about 1/4 cup)

Total Fat: 5.5 g
Saturated Fat: 0 g
Fiber: 2.1 g
Sugars: 4.4 g
Protein: 3.1 g
This is comparable to what you’ll find in Bear Naked Fit granola, and much lower in sugar than many of the other granola options you’ll find in stores.

Two Almond Cookie Recipes

Almond cookies are so fragrant. Here are two recipes, including one that is gluten-free! Both are dairy-free.


Cut-Out Almond Cookies Gluten-free Cookies
  • 1 cup cake flour
  • 3/4 cup powdered sugar
  • 1/2 cup ground almonds or almond meal
  • 1/4 tsp baking powder
  • 1/4 tsp baking soda
  • 1/8 tsp salt
  • 1 egg, beaten
  • 6 tbsp Canola or vegetable oil
  • 1 tsp almond extract
  • 1 cup oat flour
  • 1 cup ground almonds or almond meal
  • 3/4 cup powdered sugar
  • 1/4 tsp salt
  • 1 egg + 1 yolk, beaten
  • 6 tbsp Canola or vegetable oil
  • 1 tsp almond extract



  1. Combine egg and almond extract.
  2. In a separate bowl, sift the dry ingredients together.
  3. Add the oil, and then fold in the egg mixture.
  4. Regular recipe: Roll the dough out to 1/4 inch thick. Cut dough into small rounds.
    Gluten-free recipe: Drop spoonfuls of dough onto an insulated cookie sheet.
  5. Bake at 375°F for about 12 minutes.

Makes about 2 dozen.

Before baking, press a whole almond on top of each cookie, or add chocolate chips to the dough. Brush extra beaten egg yolk on top of each cookie for a yellow glaze.
