Pumpkin Pancakes

Autumn calls for pumpkin-anything, and pancakes are so easy to make. This recipe makes about 18 thick pancakes.

Ingredients

Dry Wet
  • 2 cups whole wheat flour
  • 1 cup cake flour
  • ¼  cup brown sugar
  • 1 tbsp baking powder
  • 1 ¾  tsp baking soda
  • 1 ¾  tsp cinnamon
  • ¾  tsp ginger
  • ¾  tsp nutmeg
  • ¾  tsp salt

 

  • 1 can pumpkin puree (just under 2 cups)
  • 2 eggs, beaten
  • 2 tsp vanilla extract
  • 2 ½  cups milk
  • 3 tbsp vegetable oil
  • 2 tbsp vinegar

 

Directions

  1. Mix dry ingredients together.
  2. In a separate bowl, mix wet ingredients together.
  3. Combine the two mixtures, and add optional ingredients if desired (I added chocolate chips).
  4. Spoon batter onto a griddle or pan at medium heat (I set my griddle to 275°F).
