Sweet n’ Sour Chicken

Sweet and Sour Chicken can be as lazy or as time consuming as you want it to be. Feeling lazy? Just stir fry the chicken plain. Otherwise, dip the chicken pieces in egg, and then flour them, to give them a bit of a batter coating when stir-fried. As for the vegetables, use whatever you already have. Red and green peppers, snow peas, onions, and water chestnuts work well. The star of the show however, is the sweet and sour sauce. Be sure to use fresh, not canned, pineapple. When you cut the pineapple, save and juices to use in the sweet n’ sour sauce.

Sweet and Sour Sauce

1 cup finely diced pineapple chunks
1/4 cup pineapple juice
1/2 cup brown sugar
1/2 cup white vinegar
1/2 cup water
3 tbsp soy sauce
2 tbsp white sugar
2 tbsp lemon juice
2 tbsp cornstarch

1. Mix cornstarch and water; set aside.
2. Combine all other ingredients in a saucepan, and heat on stovetop, medium-high. Stir continuously.
3. Bring to a boil, and then add cornstarch mixture.
4. Continue stirring, until the sauce reaches a syrupy consistency (~5 minutes)
5. Remove from heat when desired consistency is reached.
6. Pour over chicken and vegetables and toss.
