Slightly Less Sinful: Oatmeal-Raisin-Chocolate Chip Cookies

Here is my next attempt at making cookies slightly less unhealthy. There is no butter in this recipe. Instead, I use safflower oil, and sneak in a bit of ground flax seed.

Ingredients

1 cup all-purpose flour
1 tsp baking powder
pinch of salt
2 tbsp ground flax seed (optional)

2/3 cup firmly packed brown sugar
1/3 cup safflower oil  (Canola oil is also ok)
1 egg, lightly beaten
1 tsp vanilla extract

1/2 cup oats
1/2 cup semisweet chocolate chips
1/4 cup raisins

Preparation

Mix flour, baking powder,  salt, and flax seed together in a medium bowl.

In a large bowl, mix sugar, oil, egg and vanilla.

Stir in flour mixture, then oats, chocolate chips and raisins.

Drop by the tablespoonful onto cookie sheets. Makes about 32 small cookies.

Bake cookies at 350 degrees for about 12 minutes, until edges are golden.
